A superb Holiday dinner was enjoyed by Members and their guests on top of the world at the Canoe Restaurant atop the TD Centre with panoramic views of Toronto. Magnificent, Masterful, Mmmmmm!

IWFS Toronto’s Christmas celebration at Canoe on Sunday, December 8th, 2013, will go down in the annals as one of the very best, with a finish so long we’ll still be talking about it next year.
Masterfully organized by Board Member Bob Yakimetz, with wine pairings nothing short of genius by Cellarmaster Marcel Bregstein, the event was letter-perfect except for the absence of our President, due to illness, and our Cellarmaster.
We were greeted by flutes of Champagne Château de Bligny Champagne Blanc de Blancs and delicious canapés as the beautifully attired members and their guests arrived – including Six kilted gentlemen! All ooo-ed and ahhh-ed as they tasted the delectable offerings from the stellar O&B team under Chef John Horne in the kitchen and Joel Wilcox in the front of house. Joel was particularly adept at introducing each course.
The Jerusalem Artichoke Soup with Aged Sunflower Seed Oil and Roasted Artichokes was equally but differently divine when paired with the Bouchard Père et Fils Beane 1er Cru Beaune du Château 2008 or with the Bouchard Père et File Pouilly Fuissé 2009 – a rare treat to be offered both wines with the soup, and a rare opportunity to compare the taste sensations. The chardonnay turned the soup to nutty silk, the pinot noir to an earthier treasure.
The Poached Arctic Char with Puffed Wild Rice, Kabosu Mayo and Seared Leeks was paired with a smoky, seductive South African Stellenzicht Sémillon Reserve 2008 – another perfect match. The dish was a clever assemblage of crunch and melt-in-the-mouth tenderness with a smoky undertone that brought out the best in the wine.
A sharp, crunchy wintergreen granita provided the intermezzo.

Finally, the dessert – Vanilla Panna Cotta, Poached Apricots and Fennel Almond Cake – was paired with the Schloss Schönborn Hattenheimer Pfaffenberg Riesling Spätlese 1990.
