”Passion is what drives us.” Indeed, the words of Hyun Jung Kim, Chef/Owner of Core Restaurant resonated throughout the five-course dinner of mackerel, foie gras, salmon, beef striploin and panna cotta. And if that’s all it offered—a selection to meet most tastes, it would have been enough, so impeccably cooked it all was. The cohoe salmon, for instance, by nature drier than its sister species, was moist and gentle to the palate, its subtle flavour deftly enhanced by sides of kasha, celery and celeriac. However, what distinguished the meal were the small details that lifted mainstream dishes to another level altogether. Whoever thought of crème fraiche and mackerel? Better still, whoever thought of crème fraiche with horseradish!
As usual, our charming and expert sommelier Marcel Bregstein explained his interesting and inspiring choices in pairing the wines. The interesting half, for many of us, was being greeted with beef tartare canapés and a flute of Paladin Raboso Raboso Fiore—how lovely is that! The inspired highlight was in the pairing of a sweet 2011 Schloss Gobelsburg Riesling Auslese with the fatty creaminess of the foie gras—can life get any better? “Yes,” said Robert H. “Try the charred cabbage!” And, he was right.

And last but far from least, warm and effusive congratulations to Kate Pilgrim who attended the dinner as this year’s recipient of the scholarship awarded by our very own International Wine and Food Foundation to the top graduate in the Toronto course of the Canadian Association of Professional Sommeliers.
